With some creativity, you could create a great meal for toddler lunch. Using whole foods and organic ingredients in your toddler food recipes will result in healthy and happy toddler and parents. Creative and healthy toddler lunch recipes will satisfy any picky eater and help you to avoid feeding conflict. If you are sending your toddler to a daycare you could always use easy on the go toddler food recipes like homemade chicken nuggets, code fish sticks or mini chicken meat balls.

Chicken and veggies soup with vermicelli
Ingredients :
2 chicken drumsticks
50g organic finely chopped sweet onion
50g of organic shredded carrot
50g of finely cubed organic butternut squash
50g of finely cubed sweet potato
5 broccoli florets
5 cauliflower florets
1/3 of peeled and finely cubed organic zucchini
4 tablespoons finely chopped raw Italian parsley
100g of organic vermicelli - broken into small pieces
A bit of salt.

Directions :
1. Place chicken drumsticks in a medium soup pot filled with 3/4 of water. Place the pot over a high heat until started to boil. Add onion, carrot and parsley, salt and reduce the heat to small-medium, do not completely cover the pot, but keep it half open with the cover. Let it cook for half an hour.
2. Take out the chicken, remove the bones and finely chop the meat, place it back to the soup pot and add rest of ingredient including vermicelli. Let it cook for another half an hour on a very low heat.
*Avoid chocking hazard by making it less or more soft depend on toddler�s age.

Chicken Meat Balls

Chicken Meat Balls and Veggies
Ingredients :
100g organic minced chicken breast
100g organic finely chopped white potato
50g organic finely chopped sweet onion
1 egg yolk
1 tablespoon extra virgin olive oil
4 tablespoons of Italian parsley

30g organic broccoli florets
3 organic baby carrots
Tiny bit of salt

Directions :
1. Cut chicken into small pieces. Use processor to chop parsley and sweet onion, add chicken. Process it until creamy in texture. Add 1 egg yolk a bit salt. Mix it again.
2. Fill 3/4 of the pan with 500 ml of cold water, bring it to boil. Fill tea spoon with chicken mixture and slowly insert into boiling water. Meat will quickly separate from the spoon. Do it to the rest of the mixture. Let it cook over medium heat for 15 minutes or until chicken is well done.
3. Steam organic baby carrots and broccoli florets to serve with chicken meat balls. *Avoid chocking hazard by making it less or more soft depend on toddler�s age.

Roasted Garlic Tofu and Veggies

Roasted Garlic Tofu and Veggies
Ingredients :
100g organic firm or extra firm organic tofu
30g organic cubed sweet potato
30g organic broccoli florets
3 organic baby carrots
half small clove of garlic, smashed and minced
2 tablespoon extra virgin olive oil
Tiny bit of salt

Directions :
1. Remove the top layer from the tofu and cut it into small cubes. Saut the tofu cubes over medium heat with olive oil and garlic. Mix it, so it will get golden color from all sides.
2. Steam the veggies until soft. When ready, you could either mix it all or keep it separate when served.

Oven roasted organic chicken nuggets with steamed veggies

Oven Roasted Organic Chicken Nuggets
Ingredients :
100g organic chicken breast
3/4 cups of whole wheat bread crumbs
1 cup of whole milk
2 tablespoons extra virgin olive oil
Tiny bit of salt

Directions :
1. Use sharp knife to cut along the length of the fillet, making strips. Make several 1/2-inch thick sticks and deep the sticks into milk add salt, 1 tablespoon of extra virgin olive oil and let it stand for 10-15 minutes.
2. Dip the chicken into the breadcrumbs to completely and evenly coat. Arrange sticks in a lightly oiled baking pan (use 1 tablespoon of remaining olive oil) allowing space between each piece. Bake it in a preheated 400 degree oven for 10 to 15 minutes or until fish is cooked through. Serve it with steamed veggies for the full meal.
*Place toddler finger foods to refrigerator in airtight container for up to 3 days or freeze for 1 month.


Oven roasted cod fish sticks with brown rice & steamed veggies

Oven Roasted Code Fish Sticks
Ingredients :
100g boneless code fillet
3/4 cups of whole wheat bread crumbs
1 cup of whole milk
2 tablespoons extra virgin olive oil
Tiny bit of salt

Directions :
1. Use sharp knife to cut along the length of the fillet, making strips. Make several 1-inch thick sticks and deep the sticks into milk add salt, 1 tablespoon of extra virgin olive oil and let it stand for 10 minutes.
2. Dip the fish into the breadcrumbs to completely and evenly coat. Arrange the fish sticks in a lightly oiled baking pan (use 1 tablespoon of remaining olive oil) allowing space between each piece. Bake the fish in a preheated 400 degree oven for 8 to 10 minutes or until fish is cooked through. Serve it with brown rice and steamed veggies for the full meal.
*Place toddler finger foods to refrigerator in airtight container for up to 3 days or freeze for 1 month.
